We have run a paying SaaS on Bubble since 2023 — subscriptions, role-based access, an admin panel and about 2,000 users. It has never been the reason we could not ship something. The learning investment was real and it bought us a company.
Pros
The ceiling is genuinely high. Database and workflow logic handle real complexity.
Cons
Performance needs deliberate design, and workload pricing rewards paying attention.

“Built a real product with no engineers”
Used daily for 2+ years
Two-sided marketplace, Stripe payments, role-based dashboards, about 900 paying users. Took me four months to learn properly and I would not have a company without it. Anyone calling this drag-and-drop has not used it.
Pros
Genuinely unlimited compared with the simpler tools. Database and workflows do what real apps need.
Cons
The first month was brutal. Workload pricing means a bad query can cost money before you notice.
Problems it solves
Got a working product to market without raising money to hire developers.

“A developer's honest assessment”
Used weekly for 1–2 years
It is a real programming environment with a visual syntax, and the underlying concepts are exactly the ones you would meet in code. That makes it powerful and it also means the "no-code" framing sets people up to fail.
Pros
Expressive enough for genuinely complex logic. Plugin ecosystem fills most gaps.
Cons
Performance needs deliberate design. Debugging a slow page is harder than it would be in code.
